These are simply genius to your taste buds...a perfect springtime treat.
Lemon Drop Cookies:
Cream together...
2 c sugar
1 1/2 c butter
3 eggs
2 tsp vanilla
1 tsp lemon juice/extract
Mix in...
4 c flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
1 lemon zest grated
1 8oz bag crushed lemon drop candies
Roll into balls and bake on parchment paper (very important, otherwise the cookies will stick to the pan because of the hard candies!) 350 degrees for 10 minutes. Cool & top with fresh lemon glaze.
Lemon Glaze:
1 bag powdered sugar - use about 3 cups
Lemon juice squeezed from 2 large lemons
Mix powdered sugar in 1 cup at a time until desired consistency to drizzle and coat cookies.
